Matcha literally means "powdered tea". Sencha and Matcha are both from the same plant. Camellia Sinensis, a Green Tea which is non-fermented tea. Unlike traditional Green Tea, matcha preparation involves covering the tea plants with shade cloths before it is harvested. This triggers the growth of leaves with better flavour and texture, which are hand selected, steamed briefly to stop fermentation, then dried and aged in cold storage, which deepens the flavour. The dried leaves are then stone-ground into a fine powder. Matcha gives a steady energy boost from a high concentration of chlorophyll, vitamins and minerals present in Green Tea.
